Business School researchers’ sustainable menu tool gives caterers food for thought

Case Study from the University of Edinburgh:  A review of UK school meals’ carbon footprint wrote the recipe for a new solution to count the environmental cost of what is on our plates. After becoming the first in the world to declare a climate emergency, in 2019 the UK Government committed to cut greenhouse gas emissions to net-zero by 2050 – a sharp increase on the 80 per cent reduction target set by the 2008 Climate Change Act.
